Our House and the wine

Our goal is to offer you access to the greatest terroirs which combine power, finesse and elegance

Frédéric joined forces with Julien Boiteau (Château Margaux's vineyard manager) to create "Maison Boiteau". During your next stay at the Panorama, we will have the pleasure to make you taste the 2 vintages of " Maison Boiteau " : " le Bruleau " 100 % Chardonnay and " le Tailli " 100 % Merlot.

We work in a traditional way in Charente Maritime with selected plots of land only on Campanien, a great limestone terroir.  Our harvest is hand picked. The grapes are picked in small crates to preserve all the berries until the wine press or the storage.Each cuvée has its own identity : a plot of land , a grape variety, a cuvée. We work biological inspiration with natural grass cover, working the soil underfoot. We do the vinification, the maturing and all the bottling without filtering. The wines are aged in an air-conditioned cellar.

For the Chardonnay we press the grapes slowly to extract the nectar with a pneumatic press. A light 24-hour settling of the must in order to preserve the lees. Slow fermentation in 228-litre oak barrels with a maturing period of 12 months.

For the Merlot and Pinot Noir,  the grapes are vinified, destemmed with a portion of whole bunches according to the vintage in open storage. The vinification is traditional: daily "pigeage" or "remontage", long vatting periods of fifteen days or more. The wines are then aged in oak barrels for a minimum of 14 months.The wines are bottled and corked by us.
